Have you ever wanted to make an appetizer that looks elegant, tastes fresh, and is fun to prepare? Today, we’re diving into verrines appetizers, a modern style of serving layered food in small glasses.
Each verrine is like a miniature dish with multiple textures and flavors in every bite. Imagine creamy avocado, tender shrimp, crunchy base, and fresh herbs all in a single glass—it’s a combination that delights both the eyes and taste buds.
Verrines are incredibly versatile. You can adjust ingredients to your taste, mix savory or sweet layers, and serve them at casual dinners or festive gatherings. The best part? They’re easy to assemble but look sophisticated, which makes them perfect for impressing guests without spending hours in the kitchen. We’ll guide you step by step to create these beautiful bite-sized appetizers.

Ingredients You’ll Need

For 6 verrines (small glasses):
- Wonton cups or small clear glasses × 6
- Avocado × 1 medium, diced
- Lime juice × 1 teaspoon
- Salt × a pinch
- Shrimp (peeled, deveined) × 150g
- Olive oil × 1 teaspoon
- Paprika × ¼ teaspoon
- Ground cumin × ¼ teaspoon
- Black pepper × ¼ teaspoon
- Toasted breadcrumbs × 2 tablespoons
- Fresh cilantro leaves × 6 (for garnish)
- Optional: microgreens, citrus zest, or flavored sauce

Step 1: Prepare the Base Layer

1. Take 2 tablespoons of toasted bread crumbs and evenly sprinkle them into the bottom of each glass or pre-baked wonton cup.
2. Press lightly with the back of a spoon so the crumbs form a compact layer.
3. This layer provides a subtle crunch and a foundation for the creamy ingredients above.
We like using crunchy crumbs as the base because it balances the soft textures above. You can also add a light drizzle of olive oil or seasoning to enhance flavor.

Step 2: Prepare the Avocado Layer

1. Dice 1 medium avocado into small, even cubes.
2. Toss the avocado with 1 teaspoon lime juice and a pinch of salt to keep it fresh and add flavor.
3. Place most of the avocado cubes gently over the crunchy base in each glass.
This creamy layer contrasts nicely with the crunchy base. The lime juice not only adds freshness but also prevents the avocado from turning brown. We always handle avocado gently to keep the cubes intact.

Step 3: Cook the Shrimp

1. Season 150g peeled shrimp with ¼ teaspoon paprika, ¼ teaspoon ground cumin, ¼ teaspoon black pepper, and 1 teaspoon olive oil. Mix evenly.
2. Heat a non-stick pan over medium heat and sauté the shrimp for 2–3 minutes on each side until fully cooked and lightly golden.
3. Remove from the pan and cut the shrimp into small, bite-sized pieces.
4. Carefully layer the shrimp on top of the avocado in each glass.
Cooking shrimp this way brings out a slightly smoky, savory flavor that pairs perfectly with creamy avocado. You can also use small cooked scallops or diced chicken as alternatives.

Step 4: Add Secondary Layers

1. Use the remaining avocado cubes and place a small amount over the shrimp layer.
2. Optionally, add finely chopped cucumber, tomato, or roasted vegetables for extra color and texture.
3. Alternate colors and textures for visual appeal. Each spoonful should offer a mix of crunchy, creamy, fresh, and savory bites.
We love how layering allows you to combine flavors creatively. Even a small drizzle of lime juice or flavored oil between layers adds an extra dimension.

Step 5: Garnish and Final Touch

1. Grate a little lime zest over the top for brightness.
2. Place 1 fresh cilantro leaf on each verrine for a pop of color.
3. Optionally, drizzle a tiny bit of flavored sauce or olive oil.
4. Keep the verrines chilled until just before serving.
Garnishing may seem small, but it makes a big difference. Microgreens, edible flowers, or a few citrus zest strands instantly make the verrines look professional and appetizing.

Serving and Enjoying

We love serving verrines at gatherings because they’re easy to pick up, elegant, and visually stunning. Each glass contains a perfect bite with crunchy, creamy, fresh, and tangy elements. You can prepare them ahead of time, assemble just before guests arrive, and serve on a tray for a beautiful presentation. Watching everyone enjoy the layers is part of the fun.
